Description

A kid-friendly dish my mom used to make for us, you can make this for 2 people or 200. This recipe is so versatile, it’s hard to come up with exact quantities for ingredients.

Ingredients

  • 1 package Chicken Breast
  • Butter Or Cooking Spray, Enough To Coat Bottom Of Baking Dish
  • Flour, Enough To Dredge Chicken Breasts
  • 2 dashes Or More Of Paprika
  • Salt And Pepper, to taste
  • ½ cups Or More Of Honey
  • ½ cups Or More Of Lemon Juice

Preparation

Preheat oven to 350 degrees.

Melt butter in the baking dish intended for cooking the chicken. You can also use Pam to spray the dish.

Mix a healthy dash of paprika with flour, then coat the chicken.

Add salt and pepper to taste, and place chicken in the baking dish. Bake at 350F for 30 minutes.

While chicken is baking, whisk together equal parts of honey and lemon juice. I start with 1/2 cup each. You want to be able to cover most of the chicken.

Turn the chicken over after 30 minutes of baking, and pour honey and lemon juice mixture over chicken. Bake for another 30 minutes, turning again after 15 minutes.

I just made this last night for my dad, step-mom, and husband and everyone loved it! I thought it had such a great tangy/sweet flavor and I will definitely make it again! I added a little flour to the sauce to thicken it so that it could be poured over the chicken upon serving. It went very well with buttered new potatoes, artichokes and french bread. Yum!
