Description

Individual mini meatloaves for each family member or friend to enjoy.

Ingredients

  • 4 pounds Ground Sirloin Beef (93/7 Fat To Meat Content Ratio)
  • 2-½ cups Panko Or Plain Breadcrumbs
  • 3 whole Beaten Large Eggs
  • 1 whole Medium White Onion Finely Diced
  • 1 whole Unseeded And Diced Finely Green Bell Pepper
  • 1-½ Tablespoon Salt
  • 1 Tablespoon Black Pepper
  • 1 Tablespoon Freshly Chopped Parsley (or Parsley Flakes Are Fine)
  • ⅓ cups Ketchup
  • 12 ounces, weight Sliced Hickory Smoked Bacon
  • 1-½ cup Fluid Beef Stock (low Sodium)

Preparation

Preheat oven to 400 F.

In a huge mixing bowl add sirloin beef, breadcrumbs, beaten eggs, onion and bell pepper. Add salt, black pepper, parsley and ketchup. With your hands mix this well.

Use your hands and grab a large portion (about 1/2 pound) of the mixture. Place beef mixture on your work surface and pat into an oval shape. Repeat process with the remaining beef mixture. It should make 8 mini meatloaves. Wrap 2 slices of uncooked hickory smoked bacon around each oval mini meatloaf. Put the mini meatloaves into a 9″ x12″x3″ baking dish (2 mini meatloaves side by side making 4 rows in the baking dish). Add beef stock into the baking dish.

Cover dish with a sheet of foil and bake at 400 F for 20 minutes. Then remove the foil and bake for an additional 10 minutes.

These freeze nicely (in freezer zip lock bags) for a quick supper time meal. Just thaw and microwave a few minutes on high, or add your favorite gravy and place mini meatloaves in a covered saucepan, heat and serve.
