Being from a family that has German on both sides, pork and sauerkraut over mashed potatoes was a staple on New Year’s Day growing up. This is the recipe I made this year and the one I think I will stick with from now on.
Salt and pepper the pork roast, cutting in half if need be so it will fit in the crock pot.
Put one cup of applesauce at the bottom of the crock pot. Top that with half of the drained sauerkraut. Put the roast on top of the sauerkraut. Put the rest of the applesauce on top of the roast and the rest of the sauerkraut on top of the applesauce. Add water.
Cook on low for up to 10 hours. The pork will shred beautifully and the cinnamon in the applesauce completely changes the sauerkraut. Serve over mashed potatoes and enjoy a wonderful, hearty meal to start off your new year!
