Description

A wonderful meatloaf recipe I learned from my mom. Still the best I’ve ever tried!

Ingredients

  • FOR THE MEATLOAF:
  • ⅔ cups Oatmeal
  • 1 cup Milk
  • 1-½ pound Lean Ground Beef
  • 2 whole Eggs, Beaten
  • ½ cups Onion, finely chopped
  • 1 teaspoon Salt
  • ¼ teaspoons Pepper
  • ½ teaspoons Sage
  • FOR THE SAUCE:
  • 6 Tablespoons Brown Sugar
  • ½ cups Ketchup
  • ¼ teaspoons Nutmeg, Rounded
  • 2 teaspoons Yellow Hot Dog Mustard

Preparation

Soak the oatmeal in the milk. Add the rest of the meatloaf ingredients and mix well. Place the mixture in a large casserole dish, form a loaf, and make some indentions in the top to hold the sauce. I like to make a shape kind of like a leaf, diagonal indentions going out from the center.

Then you will need to make your sauce: mix the brown sugar, ketchup, nutmeg and mustard together and spread about 2/3 of the mixture over your meatloaf.

Bake at 350ºF for 30 minutes. At this point, take your meatloaf out of the oven and with a spoon or paper towel, get rid of excess grease, as well as any fat that might have accumulated. Add the rest of the sauce to the top, and bake for 20-30 minutes more. It depends on the thickness of your loaf. I kind of like mine to be longer and less tall.

Let it stand about 10 minutes before serving.

My youngest son walked around the house this afternoon claiming “I hate meatloaf!” I told him he would eat it anyway. After a few bites he proclaimed “I really like this meatloaf.” Ha! Proof enough.

Certainly easy enough with basic ingredients but I was a bit disappointed. Lacked enough flavor to suit my family. Unless you got a bite of the sauce, it was just baked hamburger.
