Spicy turkey sausage and black beans makes this meal healthy as well as hearty. And it can be cooked fast with the convenience of a pressure cooker of course.
1. Remove casings from sausage and chop into bite size pieces. The sausage might break apart, but that is fine.
2. Turn pressure cooker to brown, add some olive oil and brown the meat for 2 minutes, stirring occasionally. Add the tomato paste, give the meat a couple good stirs to combine and then turn off heat.
3. Open can and drain and rinse beans. Add to the meat that’s resting in the pressure cooker.
4. Add the rice to the cooker and stir to combine.
5. Pour the stock or water into the pressure cooker, season with the paprika and the optional cayenne pepper and give it one last stir.
5. Place the lid on and lock, set pressure to 50 and cook for 15 minutes. Release steam, season with the salt and pepper if desired and enjoy!
