Grilled veggies, fresh basil and gooey mozzarella cheese.
Slice the veggies into 1/3″ slices, brush lightly with olive oil and season with salt and pepper. Heat a grill pan over medium-high heat. Arrange the veggies in a single layer, and cook for approximately 3-4 minutes on each side. Remove from the pan and place on a bun, top with mozzarella and fresh basil, and the other half of the bun. But I’m sure you knew that part!

I get a sandwich like this at a local resturant… yum!
