This is the casserole I grew up on. Lucky for me, the hubby loves it too.
Heat oven to 350 degrees.
Spray casserole dish with cooking spray .
Pour hot water in baking dish (I nuke the water to get it really hot). Add rice and mix.
Brown hamburger and celery. Add salt and pepper to taste .
While meat drains, add the two cans of cream of mushroom soup to the rice and water mixture, stirring well to combine.
Add drained meat and celery to casserole dish; mix well.
Add soy sauce and stir.
Cover and bake for 1 hour.
Note: My husband also adds Tabasco, a staple here in Texas. These amounts are for a DOUBLE batch, which is the only way I make it. It can be halved, though.
To quote my husband to my new mother-in-law, “Momma, it’s the ugliest dish I ever saw and I ate three plates of it.”

This is how I make hotdish too – except I like a lot more soy sauce, I probably use 1/4 cup per lb of beef.
A Minnesota staple!
