Flavorful, moist Pork Tenderloin.
Marinate the pork tenderloin in the Badia mojo marinade or your choice of mojo marinade for 1 hour. I cooked this in a cast iron skillet on top of the stove. Brown the pork tenderloin in an oiled pan, 10 minutes on each side. Salt and pepper to taste. When browned, add the red cooking wine or wine of your choice and the balsamic vinegar. Cover and simmer 10 minutes. (I added 1/4 cup of water to the pan to stretch the really tasty sauce.) Served with some roasted potatoes.
