This makes a nice big batch in your slow cooker. Feed a crowd or freeze half for another day!
In a large skillet over medium heat, brown ground beef and onion. Drain grease if necessary. Scrape the mixture into a large non-stick sprayed slow cooker and turn on low. Add all remaining ingredients except corn chips and toppings. Cook for 8 hours or all day.
To serve: Place a layer of corn chips onto your plate, then add a ladle of meat and your choice of toppings.
Easy and delicious!
