Description

A twist of Mexican and pasta, what could be better??

Ingredients

  • 1 pound Ground Beef Or Ground Turkey
  • 1 can Large Can Refried Beans
  • 1 package Taco Seasoning
  • 1 box Uncooked Manicotti Shells
  • 1 jar 16 Oz. Taco Sauce Or Salsa
  • 16 ounces, weight Shredded Mozzarella Cheese

Preparation

Preheat oven to 350 degrees.

Combine raw ground meat, refried beans and taco seasoning together, I usually mix with my hands.

Stuff the meat mixture into the uncooked manicotti shells and place into a 9×13 dish in a single layer. If the whole mixture is not used in stuffing the shells just place into open areas of the pan.

Pour the salsa on top of the shells, add about 16 oz of water to the pan as well.

Cover the pan with foil and bake for 1 hour in a 350 degree oven or until the shells are tender.

After the shells are tender, remove the foil and cover with the shredded mozzarella cheese. Place back in the oven for about 15 min, or until the cheese is melted.

Remove from oven and let set for about 5 min. Serve with taco topping.

I usually use ground turkey or a 93/7 ground beef as the fat is cooked into the meal.

The prep work was a little messy — but well worth it. This was absolutely delicious! My husband and I both thought so!
