Description

One of my mom’s favorites, not sure where she got the recipe. Yummy comfort casserole!

Ingredients

  • 8 ounces, weight Manicotti Shells
  • 2 cups Cooked Cubed Checken
  • 2 cups Shredded Monterey Jack Cheese, Divided
  • 1-½ cup Shredded Cheddar Cheese
  • 8 ounces, weight Sour Cream
  • 1 whole Small Onion, Chopped, Divided
  • 4 ounces, weight Chopped Green Chilies, Divided
  • 1 can (10 Oz. Size) Cream Of Chicken Soup
  • 1 cup Salsa
  • ⅔ cups Milk

Preparation

Preheat oven to 350ºF. Cook manicotti according to package directions.

Combine chicken, 1 1/2 cups jack cheese, cheddar, sour cream, 1/2 of chopped onion and 1/2 of the chilies.

Combine soup, salsa, milk, remaining onion and chilies. Spread half in a 13 x 9 casserole dish. Stuff manicotti with chicken mixture and place on top of sauce. Pour remaining sauce over top.

Cover with foil and bake at 350ºF for 30 minutes. Uncover and sprinkle with remaining jack cheese. Bake 10 minutes longer.
