This is a tasty and fairly inexpensive meal to make. I love Mexican-inspired flavors and we are sour cream addicts at my house so of course it got served up with plenty on the side! Add a salad and it makes a nice little meal for four.
Thaw tater tots on a plate, just stick them in the microwave on defrost for a couple of minutes. When done, set them aside.
Heat a 10” skillet over medium-high heat (use one with a lid—you’ll need it later).
Mix the drained tuna and salsa in a bowl.
Spread the thawed tater tots in the hot skillet, breaking them apart and pressing them down to brown. Turn them several times and continue to cook until they are well crisped. Take the back of a spoon and press tots down and up the sides of the pan to form a shell.
Spread the tuna mix on the “shell” in the pan. Top with cheese and cover the skillet. Continue to heat until everything is heated through and cheese is melted (approximately 6-8 minutes).
Remove it from the heat, let it cool slightly, cut into slices and serve with extra salsa and sour cream if desired.
