Great weekend lunch!
Set the grill or a griddle pan over medium heat. Spread half the butter on one slice of bread. Place bread on grill or pan, buttered side down. Top with turkey, half of the spinach, and half the provolone. Follow with remaining spinach, remaining provolone. Spread one side of the remaining slice of bread with mustard and place on top of sandwich, mustard side down. Spread remaining butter on top of the second slice of bread. When sandwich has cooked for a total of 2 minutes, flip and cook another 3 minutes on the other side.
Plate, cut in half and serve. Enjoy!
