Description

Fresh and flavorful, these peppers can be adapted for a variety of dietary needs. For example, replacing some or all of the meat with quinoa or couscous will ensure that everyone eats what they love!

Ingredients

  • 1 pound Ground Beef, Turkey, Chicken, Or Lamb
  • ½ cups Cherry Tomatoes, Diced If You Wish
  • 1 cup Spinach, Chopped
  • ¼ cups Feta Cheese
  • 1 Tablespoon Minced Onion
  • 2 teaspoons Lemon Juice
  • 2 teaspoons Minced Garlic
  • 1 teaspoon Parsley
  • Salt And Pepper, to taste
  • 4  Bell Peppers
  • ¼ cups Shredded Parmesan, Asiago, Mozzarella Or A Combination Thereof

Preparation

Preheat the oven to 350 F.

In a large pan over medium heat, brown your beef (or turkey or lamb.) Once fully cooked, drain the juices (if you wish) and then turn down the heat to medium-low. Add the tomatoes, spinach, feta, onion, lemon juice, garlic, and parsley and stir it all into one big, happy family. Let the cheese get melty and beautiful.

While that happens, chop the tops off of the peppers, get rid of any straggling seeds, and sprinkle some cheese inside the bottom of each pepper. Because cheese is good.

Once the all of the ingredients in the skillet seem combined with the melted cheese, scoop as much as you can into each of the peppers. Once they’re all full, arrange the peppers in a baking dish. Put the dish into the oven and let them cook for 20 minutes. Then remove the dish from the oven, add some more cheese on top and give them an extra ten minutes in the oven. Remove from the oven. Be sure to let them cool for a minute before you dive in.
