Description

The most tender flavorful grilled chicken topped with a tomato and cucumber salsa.

Ingredients

  • 12 ounces, weight Chicken Breasts, Split In Half Or Flattened
  • FOR THE MARINADE:
  • 3 Tablespoons Garlic In Fused Red Wine Vinegar
  • 1 teaspoon Extra Virgin Olive Oil
  • 1 teaspoon Oregano, Dried
  • ⅛ teaspoons Pepper
  • ⅛ teaspoons Salt
  • 2 Tablespoons Greek Yogurt, Plain
  • FOR THE MEDITERRANEAN SALSA:
  • 1 whole Large Tomato, Seeded, Diced Small
  • ¼ cups Sweet Bell Pepper, Diced Small
  • ½ cups Cucumber, Diced Small
  • 10 whole Black Olives, Sliced In Half
  • ½ ounces, weight Goat Cheese Crumbled
  • ½ teaspoons Oregano
  • 1 teaspoon Fresh Basil
  • 1 pinch Salt
  • Balsamic Glaze, To Drizzle (optional)

Preparation

Place chicken in a shallow bowl; set aside.

In a bowl, add all of the marinade ingredients, mix until combined. Pour over chicken. Cover chicken and refrigerate for at least 2 hours.

Meanwhile, to make the salsa, add all the salsa ingredients together, and refrigerate until ready to use.

Set grill over medium heat. Place chicken on grill and cook for 5 minutes; flip chicken and cook for about 3 minutes or until no longer pink.

Serve salsa over top of chicken and drizzle with balsamic glaze.
