Sweet and salty sausage, onions, and peppers in a light maple syrup glaze. Delicious over rice.
Saute sausage and onions in olive oil in a large skillet on medium heat, until the onions turn translucent and start to caramelize. Add diced bell peppers and turn heat to high. Cook for several minutes until bell peppers are tender-crisp. Turn heat to low. Add maple syrup and black pepper. Cook on low for 5 minutes until sauce thickens. Serve over rice.
