Sweet, smoky and slightly caramelized roasted chicken, perfect for a chilly fall night!
Preheat the oven to 400 degrees Fahrenheit.
Remove the organs from inside the chicken, then rinse and pat the chicken dry. Grease a foil-lined baking sheet and place the chicken, breast-side-down, on the baking sheet. Drizzle olive oil and season with salt and pepper. Roast for 30 minutes, then turn the chicken breast-side-up and insert a meat thermometer into the area between the thigh and the breast.
Pour maple syrup over the chicken, then season with more salt and pepper. Roast for approximately 45 minutes more, until the meat thermometer registers 165 degrees. Baste occasionally with additional maple syrup, if desired. When chicken finishes cooking, remove it from the oven and allow it to rest for 10 minutes. Carve and serve.
