Fantastic way to use up any acorn squash you have lingering in the garden! The presentation is quite cute, as well, as each squash half serves as its own dish. You can easily adjust this recipe for a crowd, as my mother used to do.
1. Halve each squash, clean out seeds and membranes, and place in a glass 9×13 pan. Pour water into bottom, until it’s approximately 2 inches high. Divide butter amongst squash halves, placing the dabs of butter in the cleaned out hollow. Cover the pan, and cook in oven at 350 until squash is soft.
2. Brown maple sausage, drain.
3. Remove squash from oven, divide browned sausage among squash, and then sprinkle with brown sugar (to your liking – sometimes I use more than 1 cup, sometimes less).
4. Put squash back into oven, until sausage and brown sugar have melded together and warmed through.
5. Serve each person their own individual squash ‘n’ sausage bowl!

To make cutting the squash easier, put in microwave for a few minutes. This sounds yummy can’t wait to try, i always make mine with just brown sugar and butter but I like the addition of the sausage hubby will too!!

This is a great recipe. I use one that is very similar but also adds diced Granny Smith Apple…. sage sausage is another alternative for a more savory taste.
