I have a quick dinner idea for you tonight, girls. You can use any mild fish that you like. We prefer Mahi Mahi. I have a super simple marinade, 4 ingredients, you toss on the fish and let it set in the fridge for a while (at least 30 minutes or all day if you’d like). Throw it on the grill (careful, the oil gets quite a reaction as it drips on the grill…no hairspray please).
In a bowl mix olive oil, chili powder, garlic and lemon juice. Place fish in a Ziploc baggie and pour the marinade in. Let fish marinate for a minimum of 30 minutes or up to 6 hours.
Grill fish on high heat for 5-7 minutes, per side, depending on how thick your fillets are.
Chop up some lettuce, tomatoes or grab some salsa, guacamole, and cheese if you please. Everyone can conduct their own symphony on their tortilla and viola, a yummy, quick healthy dinner in a snap!
Rarely are there leftovers. Ummm, sooo good!

Grilled my mahi mahi using your marinade which made for a very nice mild flavor. I only had some salsa and cheddar on hand to use with the fish on tortillas but I really enjoyed it!
