Magical because this sandwich is quick, simple and delicious. And it’s perfect for either breakfast, lunch or dinner. This sandwich does it all!
Heat your oven’s broiler.
If it’s not already sliced, slice your bread roll in half and toast lightly using your preferred method. Evenly divide your Dijon mustard and spread on one side of each piece of bread. Top each piece of bread with half of the sliced avocado and half of the sliced tomato. Season the tomatoes with salt and pepper, to taste. Top each sandwich half with 1 slice of cheese.
Place the open faced sandwiches on a cookie sheet and broil in the oven until cheese is melted. If desired, top with a poached egg.
