Spicy, smoky, easy Mac & Cheese
Bring 6 qts of water to boil, salt and add pasta. Cook according to package directions.
In another large pot, melt the 1/2 cube of butter and add cream. Allow to cook together and reduce about 1/3.
Sprinkle in grated cheeses, and stir to combine. You may reserve 1/2 cup of cheeses to sprinkle over the top if you wish, but I don’t.
After the cheese has melted into the cream it should be a relatively thick consistency (mind that this is also going to bake in oven, so it need not be perfect!).
Combine drained pasta with cheese sauce, there will be extra sauce, but it will cook down.
Spray large lasagna pan or other baking dish with cooking spray and pour into baking pan. Bake at 400 for approx 40 minutes.
The cheese will brown at the edges and be thick and bubbly! YUM!

Donna… I haven’t given it a try, but would be afraid of the sauce separating or curdling. That does seem to be an issue with creamy fatty sauces! For a quicker prep though, I have pre-cooked the pasta the night before, and grated the cheese, or purchased it grated.
