These are kind of like open faced cheeseburgers, but more like meatloaf or meatball sandwiches. Simple, casual, yummy, comfort food. My recipe is adapted from Cooks Country and is sooooo easy!
1. Preheat the oven to 450 degrees F.
2. Place the sub rolls, cut side up on a wire rack set on top of a sheet pan. Bake (with the oven rack in the upper middle position) until golden and crisp, about 5 minutes. When done, remove from the oven and set aside.
3. Combine all the remaining ingredients for the burgers in a large bowl, just as you were making a meat loaf or meatballs. I’ve made it with both French fried onions and raw chopped onions and like it both ways. You get a stronger onion flavor with the raw so use according to your liking!
4. For the topping: Combine the additional 2 Tablespoons of ketchup with the yellow mustard, in a separate dish.
5. Top the toasted rolls equally with the meat mixture. Take care to cover the bread all the way to the edges with the meat mixture so it doesn’t burn!
6. Evenly brush the top of the meat mixture with the ketchup and mustard mixture.
7. Bake for 20-25 minutes, until the meat registers 160 degrees F. Remove from the oven, top with the shredded cheddar cheese and continue to bake until the cheese is bubbly and melted, about 3-4 minutes. Let rest 5 minutes before serving.
8. Enjoy!!
