Inspired by one of my favorite boutique restaurants, this dish can stand on its own as an entree or be served on the side. The smokiness of the bacon is an excellent complement to the lobster.
1. In a medium size bowl, stir together the condensed soup, milk, and shredded cheddar until the soup is well blended.
2. Stir in the pasta, lobster, and bacon until well dispersed.
3. In a small bowl, mix breadcrumbs with melted butter.
4. Pour pasta mixture into a 2-quart oblong baking dish and sprinkle with breadcrumbs.
5. Bake at 400ºF for 25-30 minutes, or until cheese mixture is bubbly and breadcrumbs toasted.
Tip: If you live near a Trader Joe’s, they sell 12-ounce frozen packages of precooked langostino tails.
