Whole, roasted chicken stuffed with lemons, butter, thyme, and garlic. Guaranteed to make your kitchen smell divine.
1. Preheat oven to 400 degrees.
2. Mix softened butter with grated garlic.
3. Rinse chicken and remove giblets, neck, and other “innards.”
4. Separate skin (on the breast side) from the meat. Rub meat with garlic butter.
5. Stuff chicken cavity with lemon slices and thyme sprigs.
6. Sprinkle with salt and pepper.
7. Bake for 1 1/2-2 hours or until meat is cooked through. Pierce area between leg and thigh to produce clear juices or check internal temperature (should be 160 degrees).
8. Allow to rest for 20 minutes before serving.
