This was a delicious meal. I just made it for dinner tonight and it was so simple. My internet was down though, so I couldn’t remember the process, just the ingredients. Therefore, I simply combined everything in a bowl and put the chicken, with the ingredients, in a zip-top bag for an hour or so. It still came out really great! I can see this becoming my go-to marinade. Thanks for sharing!

This was a fabulous find. We had everything on hand, including the fresh thyme from our first gardening effort. South Beach Friendly (I try). The only change I’d make next time would be to flatten the chicken with a mallet, vs. butterflying. Butterflied, the pieces were a little on the thin side for us, otherwise a definite keeper!

So glad to have a recipe to use all the fresh thyme that is coming up in our herb garden.
