This baked lemon pepper salmon is ready in minutes and super easy. Perfect for a quick weeknight dinner and make extras for leftovers the next day.
Preheat oven to 400ºF. Line a baking sheet with parchment paper, foil, or a silicone baking mat.
Place salmon fillets on the baking sheet.
In a small bowl, mix lemon zest and juice, garlic powder, avocado oil, butter, and parsley.
Using a basting brush, coat one side of the salmon with the lemon mixture and then season with salt and pepper. Repeat on the other side.
Bake for 8–10 minutes, depending on the thickness of your salmon. If the salmon has skin, bake skin side down.
Remove from the oven and serve.
