The best lunch option for two any day!
Preheat grill or griddle pan to medium high heat and lightly spray with oil.
Lay chicken on a clean flat work surface and carefully cut through the middle of chicken, dividing into two pieces. Place each piece between plastic or waxed paper and pound out with a meat mallet or rolling pin.
I a bowl, combine salt, pepper, lemon zest and juice. Add chicken, coat well, and place on grill or griddle pan. Grill 4–5 minutes each side or until juices run clear. Meanwhile, lightly toast buns or rolls, if desired.
Optional: For the lemon mayo spread, add mayo and lemon juice in a small bowl and stir to mix. Spread on the top and bottom of bread.
Add grilled chicken to bottom of the roll/bun and sprinkle Parmesan cheese on top. Add any other condiments you enjoy (lettuce, tomato, avocado), cover with coated top bun/roll and enjoy!

Hi Cheryl! I just wanted to tell you this sounds so delicious! I wish I had this for lunch instead of fast food! But that’s what the under the weather daughter ordered so I guess I didn’t have much choice…in any event, I can’t wait to try make this grilled chicken sandwich. Love lemon everything and anything with mayo so it’s perfect
