Easy quick and light dinner!
1. Cut chicken into bite size pieces and put it into a small bowl.
2. Season chicken with a few dashes of black pepper and seasoning salt.
3. Add flour and mix into chicken.
4. Spray a large skillet with cooking spray and heat on medium-high heat. Add chicken and cook until done or about 5 minutes. Remove chicken to a plate and keep warm.
5. Add chicken broth, garlic, and red pepper flakes (optional) to skillet. Bring to a boil over medium-high heat.
6. While waiting for broth to boil, chop parsley.
7. Add broccoli into the skillet, cover, and cook for 2 minutes.
8. Add red pepper, cover, and cook for 2 minutes.
9. Remove skillet from heat. Add parsley and lemon zest over the entire pan. Squeeze lemon juice over pan.
10. Mix everything together well. Serve over rice and enjoy!
