A crispy, lemon-y, easy, fast, yummy chicken.
-Juice the lemons and set the lemon juice aside.
-Put the flour on a plate.
-Melt most of the butter, leave a little to melt in the middle of the cooking. Use medium heat.
-Wash each piece of chicken in cold water and immediately put it in the flour and cover both sides.
-Put chicken in the pan along with the butter. Season the exposed side of the chicken with pepper and salt/garlic mix.
-Once all of the chicken is in the pan and cooked about half way, flip over. Season the other side of the chicken with the spices. If necessary, add the rest of the butter.
-When you have cooked the chicken until it only has about a minute or two left, add the lemon juice. It might steam a little.
– I have served this chicken both right out of the pan, and cold and it has always been wonderful.
– I love it with a little feta cheese on top. I have also used it in a pita wrap with lettuce, cucumber, bell pepper slices and a little Caesar dressing. Yum.
