My basic roast chicken.
Preheat oven to 425 F.
Tuck wings under bird. This may take some muscle.
Stuff the quartered onion and lemon in the chicken cavity.
Loosen the skin from the breast using clean hands. Rub butter, oil, salt and pepper between the skin and breast. Place 4-6 lemon slices under the skin (they will be so yummy!).
Put more butter, oil, salt and pepper on the outside of the bird. Bake for an hour and a half, or until the juices run clear.
