Shredded turkey cooked up with crunchy peppers and onion and a little spice, coated with gooey, melted stringy cheese
Preheat oven to 180ºC (355ºF). Heat a drizzle of olive oil or low fat cooking spray in a frying pan over a medium high heat. Add onion and cook for 2 minutes.
Add red pepper and cook for around 5 minutes, until softened. Add turkey and jalapenos and stir everything together well. Cook for a couple of minutes to heat through.
In an ovenproof bowl, add a layer of the turkey mixture then around 1/3 cheese. Then add the rest of the turkey mixture and the rest of the cheese. Place in the oven for around 10 minutes until cheese has melted. Don’t overdo it or the cheese will start to harden.
Serve with a pinch of paprika sprinkled over the top with nachos or crudites.
