Description

Lean ground turkey, sautéed peppers and onions, and creamy feta cheese bake together in a perfectly sized, Buffalo wing sauce smothered meatball. This is basically the meatball to end all meatballs. Bonus: it’s ultra healthy!

Ingredients

  • ½ whole Bell Pepper, Diced (I Used A Combination Of Red And Orange)
  • ½ whole Small Red Onion, Diced
  • ½ teaspoons Coarsely Ground Garlic Salt, Divided
  • 19-¼ ounces, weight (more Or Less) 93% Lean Turkey
  • 1 whole Large Egg
  • 1 whole Large Egg White
  • ¼ cups Italian Breadcrumbs
  • 2 Tablespoons Milled Golden Flaxseed
  • 1 teaspoon Garlic Powder
  • ¼ teaspoons Diced Crushed Red Pepper
  • ½ cups Crumbled Feta
  • ½ cups Favorite Buffalo Wing Sauce, Such As Sweet Baby Rays Buffalo Wing Sauce And Glaze

Preparation

Preheat oven to 350ºF.

In a small, lightly greased saucepan, sauté diced peppers, onions, and 1/4 teaspoon garlic salt on a medium heat. Keep covered, stirring occasionally until peppers and onions are soft. Set aside.

In a medium mixing bowl, combine ground turkey, eggs, breadcrumbs, flax, and seasonings; mix well. Stir in sautéed vegetables and feta.

Roll into small balls using approximately 2 tablespoons of meat. Set on a foil-lined, greased baking sheet. Gently brush with Buffalo sauce.

Bake on center rack for 15 minutes. Remove from oven and brush with another coating of Buffalo sauce. Bake another 3 minutes.
