This was one of the first recipes in my “box” when I was a new bride. I love it because it is easy, yummy, and has great presentation. It is fantastic to serve to guests.
Cook noodles. Drain and lay out separately on wax paper.
Chop spinach and combine with ricotta, feta, nutmeg, salt, pepper, garlic, basil, and 3/4 cup of the Parmesan.
Spread about 1/4 cup of the spinach mixture along entire length of each noodle; roll up noodles. Stand noodles on end and slightly apart in a baking dish.
Pour sauce over noodles. Bake, covered, at 350F for about 30-40 minutes. Sprinkle with remaining 1/4 cup Parmesan and mozzarella. Let sit for 5-10 minutes before serving.

I made these for a party and was not impressed. I thought that they were bland and just not very exciting. My guests said that they liked them though, so maybe it was just me, or they were lying.

i made the lasagna rolls earlier this week and they were a huge hit. i had to cook them at a little higher heat to get the job done (may have been my oven settings) but everyone loved them. thanks for posting the recipe!

These were so yummy! I made them last night, and I don’t think I’ve ever had a homemade lasagne that was so tasty. I used chevre instead of feta, so I don’t know how much that altered the flavor, but it was fabulous.
