This is hand’s down my son’s favorite pasta sauce. But please don’t tell my Italian mother-in-law! He would eat it right out of the bowl, just like chili, if I’d let him. It makes a big batch, so I freeze half to keep on hand for those unexpected hectic days.
Heat the oil in a large deep skillet.
Add the garlic and onion and saute until tender, around 8 minutes. Add the celery and carrots and continue to saute another 6 to 7 minutes. Turn up the heat and add the ground beef to the skillet, breaking up lumps and cooking until no longer pink, around 5 minutes.
Add the tomatoes, parsley, basil, salt and pepper. Bring to a low simmer and cook, allowing the sauce to thicken, for around 30 minutes. I tend to let it go for much longer and it tastes even better to me.
Stir in the cheese and serve on any kind of pasta you choose!
