Description

I get these ideas for new recipes all the time. Then … I jump up and try to create it. I think the angels in Heaven are wanting me to cook. One bite of these and you will be hooked! These little sliders are so easy to make and wonderfully tantalizing to your taste buds. My family raves over them.

Ingredients

  • FOR THE CHICKEN:
  • 1 cup Vegetable Oil, For Frying
  • 2 whole Chicken Breasts, Cut In Half Horizontally
  • 1 whole Egg, Lightly Beaten
  • 2 Tablespoons Frank's Wing Sauce
  • ½ cups Self-Rising Flour (may Need To Double This Amount)
  • 1 cup Shredded Mozzarella Cheese
  • FOR THE WAFFLES:
  • 2 cups Pancake Mix
  • 2 Tablespoons Frank's Wing Sauce
  • 1-½ cup Cold Water
  • 1 whole Egg, (I Used Only The Egg White)
  • 2 pieces Lettuce, Divided Into 4 Pieces
  • ¼ cups Frank's Wing Sauce, Divided To Pour Over Each Slider

Preparation

For the chicken:
1. Heat oil in a skillet on medium high heat. Cut the chicken breast in half, horizontally. Blot the chicken dry with a paper towel and set aside.
2. In a small bowl beat the whole egg with 2 tablespoons wing sauce.
3. In another bowl add 1/2 cup to 1 cup self rising flour.
4. Dust each chicken breast with self-rising flour.
5. Then toss into the egg making sure the chicken breast is coated well.
6. Then dredge the chicken in the self rising flour again, put it into the skillet and fry until cooked through. This will take about 5 minutes, assuming the chicken is totally covered in the oil. If not it may take a bit longer, up to 5 minutes per side.
7. Remove chicken from the pan using a slotted spoon. Drain on a sheet of paper towel and top each piece with 1/4 cup mozzarella cheese.

For the waffles:
Preheat your waffle iron according to manufacturer’s instructions.

In a large bowl mix together: 2 cups pancake mix 2 tablespoons wing sauce, 1 1/2 cups cold water and 1 whole egg (or egg white). Scoop some batter (use the amount recommended for your waffle iron) onto the preheated waffle iron and cook until browned to your liking. I made mine crispy so it doesn’t become soggy with the extra sauce and heat from the chicken. Repeat with the remaining batter.

For the assembly:
Divide each waffle into 4 pieces (so you’ll have 2 tops and 2 bottoms from each waffle.)

On a plate use 1 quarter of the waffle for the bottom of the slider. Add a slice of lettuce then your chicken, and then pour Frank’s Wing Sauce over the chicken and top with another waffle quarter. There you have it! The best slider! Yummy! Yumma-liciousness! Enjoy! Kristi
