A quick, easy way to make fish at home. I love fish ‘n chips so making it at home is a must.
Preheat your oil, I used a deep fryer at the highest temperature. Any oil is fine.
Mix up your pancake batter ahead of time. I used 1 cup of dry pancake mix to 3/4 cup Perrier. Set aside.
Cut the haddock into pieces. Set aside.
In a bowl mix flour, salt and pepper.
Dredge your fish in the flour mixture. It only needs a light coating.
Dip fish into pancake batter and shake off excess.
Drop the fish into the hot oil and cook until golden brown. Should take about 4 to 6 minutes.
Drain the finished fish on paper towels, repeat with the remaining fish. Then serve.
