Who doesn’t like flavorful grilled shrimp? I like to call these Kicked Up Shrimp because they are super flavorful and bring a little bit of heat. (Prep time includes marinating!)
If using frozen shrimp, place in colander under cold running water for 3-5 minutes until thawed. Let drain while mixing together the marinade.
In a small mixing bowl, combine olive oil, lime juice, honey, thyme, cumin, paprika, cayenne pepper, cilantro, jalapeño and garlic.
In a shallow baking dish, spread the shrimp out in a single layer. Pour the marinade over the shrimp and turn them once or twice so they are fully coated. Cover with plastic wrap and refrigerate for 2-3 hours.
Skewer shrimp before cooking. 5-6 per skewer should be just right.
Grill over medium heat for 3 minutes on each side. Be careful not to overcook them.
*Cook’s note: this recipe served four with lots of grilled vegetables and pasta salad to complete the dish. If the shrimp will be the main event, these quantities will better serve 2-3. Double the recipe if you’ll be serving more than that.

Sorry guys – realized I left out the garlic measurements. Should be 2 cloves, finely chopped. So glad you enjoyed it!!

Well I made it tonight, everyone loved it! The shrimp I had were on the smallish side so we grilled them in a grill basket instead of on skewers. They were great. Very flavorful marinade, yum, yum. Thanks for this super recipe.

Hi Shea Sylvia, WOW, this sounds so good! How much garlic? Is it to taste, maybe 1-2 minced cloves? I can see the small pieces of it in your picture. I want to make this tonight for my husband’s birthday.

Made this last night and served on spinach salad with some mushrooms and a little red onion with some spicy ranch dressing. Out of this world! I had fresh thyme so I increased the amount and added that.
