A ridiculously simple pulled pork burger recipe.
Preheat oven to 160ºC (320ºF or Gas 3).
Drizzle olive oil over pork shoulder, and then rub in the salt. Place seasoned pork shoulder into a oven-proof dish and pop the lid on (alternatively, wrap the pork in a few layers of tin foil).
Place pork in the oven and cook for 3 1/2 hours. Once done, take it out. Remove the crackling and place crackling on a separate tray.
Crank the oven up to 190ºC (375ºF) and place the crackling on the top shelf. Meanwhile, keeping the pork shoulder in the dish, go at it with two forks, pulling at it like a crazy person. Shred pork well. Add the onion gravy and continue shredding.
Fill the burgers with pulled pork and add some sliced red onion. Remove the crackling from the oven and break up to serve.
