Description

A cozy crockpot chili perfect for the cold winter month of January. I serve this on top of brown rice.

Ingredients

  • 1 whole Large Sweet White Onion
  • 2 teaspoons Organic Extra Virgin Olive Oil
  • 1 pound Ground Turkey
  • 1 teaspoon Sea Salt
  • 1 teaspoon Black Pepper
  • 1 can Small Red Beans (15.5 Oz Can)
  • 1 can Pink Beans (15.5 Oz Can)
  • 1 can Crushed Tomatoes (28oz. Can)
  • 1 can Tomatoes With Green Chiles, Like Ro-tel (10oz Can)
  • 1 can Tomato Sauce (15 Oz Can)
  • 2 Tablespoons Josephine's Chili Seasoning (see My TastyKitchen Recipe Box)
  • 2 teaspoons Maple Syrup
  • 1 teaspoon Red Wine Vinegar

Preparation

1. Peel, then cut the onion in half. Chop half of the onion and put it in a large pan with the olive oil over medium heat. Add ground turkey, salt and pepper. Brown the turkey with the onion. Once the turkey is fully browned and onion is soft, add the mixture into a large slow cooker/crockpot.

2. Chop the other half of the onion and add it into the crockpot with the ground turkey. Drain and rinse both cans of beans in a colander and then add the beans into the slow cooker. Add the crushed tomatoes, tomatoes with green chiles, tomato sauce, chili seasoning, maple syrup and red wine vinegar. Stir to combine and put the lid on.

3. Set the slow cooker/crockpot to cook for 3 hours on high (or 6 hours on low).

Note: See my TastyKitchen recipe box for my recipe for homemade chili seasoning (Josephine’s Chili Seasoning) or use a 1 ounce packet of store bought chili seasoning.
