Description

Sweet and savory. This is a delicious flavor combination.

Ingredients

  • 2 whole (about 1/2 Lb. Size) Fresh Boneless, Skinless Chicken Breasts
  • 2 Tablespoons Sweet Cream Butter, Melted
  • ¼ teaspoons Black Pepper
  • ½ cups Honey
  • ½ teaspoons Cinnamon
  • 2 whole Jalapeno Peppers, Diced (Stems And Seeds Removed)
  • 4 whole Fresh Peaches, Peeled, Pitted And Diced
  • 1-¼ cup Low Sodium Chicken Stock

Preparation

Preheat oven to 375ºF.

On a plate, place chicken breasts and brush the breasts with melted butter. Sprinkle black pepper.

In a mixing bowl, add honey, cinnamon, diced jalapeno peppers and diced peaches and stir together well.

You can use a cast iron skillet (10-inch) to bake it, or if you prefer, a 6×9 nonstick baking dish (I have used both and the recipe is equally good either way). Add chicken breasts into the baking dish, pour the jalapeno-peach mixture over the chicken, and add the chicken stock. Cover with a piece of foil and bake at 375ºF for 40 minutes. Uncover the dish and cook for an additional 10 minutes. Total bake time is 50 minutes.

Serve with a salad, your favorite vegetables or a hot baked potato! Enjoy.

Hello Andrea, ooh-never heard of jalapeno wine – that’s a cool idea!!! You could use that instead of all the chicken stock or marinate the breasts first in that, yes hope it comes out good for you two!!! Bet you’ll come up with a nifty idea. Your TK Friend, Cheryl.
