Smoky, spicy and sweet!
If using wooden skewers, allow them to soak in water for at least 10 minutes.
Cut chicken into bite-sized chunks.
Mix together honey, cider vinegar, coriander and cumin. Put chicken in the honey mixture and allow to marinate for at least 30 minutes.
Carefully slice jalapenos in half and remove all seeds. (Using gloves will prevent jalapeno burn.) Slice jalapenos into squares.
Thread chicken and jalapenos onto skewers. Season with salt and pepper.
Grill on a grill pan or BBQ for 10 minutes on each side. Occasionally brush chicken with marinade while grilling.
Remove and serve!
