Italian sausage in a tomato sauce, with green peppers, onions and capers.
In a large heavy pan, sauté sliced green peppers, onions and minced garlic in olive oil until tender. Add the skinned and quartered sausages and sauté the sausage until brown. Add the tomato paste with the water, wine, and capers; stir until combined. Lower the heat and cover, simmer, and cook for about an hour. Serve over pasta, polenta or some good crusty bread.
