I love lasagna. Always have and figure that I always will. This recipe puts a slight twist by making the lasagna as rolls and using Italian sausage.
Preheat oven to 350 F.
Brown Italian sausage in a skillet over medium-high heat. Once browned, remove from heat and drain grease.
Boil the noodles according to package directions.
While the pasta is cooking, mix your ricotta cheese, eggs and cooked sausage in a large bowl. Keep a small amount of sausage to crumble over the top of the assembled rolls later.
When lasagna noodles are complete, drain them and then lay noodles out on your work surface side-by-side. Spoon cheese and sausage mixture evenly on each on noodle. Sprinkle salt and pepper over the top.
Spread a layer of pasta sauce in the bottom of a greased 9 x 13 dish. Roll up lasagna noodles and place the rolls in the dish seam side down. Top with remaining sauce, cheese and sausage crumbles. Bake for 45 minutes.
