Description

Park the Vespa and heat the grill—we’re going on an Italian food adventure.

Ingredients

  • 2 teaspoons Or A Drizzle Of Olive Oil, One For The Fish, One For The Arugula
  • 1 pound Fresh Halibut
  • 1 teaspoon Italian Seasoning, More If Needed
  • 1 cup Or A Plateful Of Fresh Arugula
  • 1 Tablespoon About A Squeeze Of Fresh Lemon
  • 2 Tablespoons Pesto, Fresh Is Best But You Can Use Buitoni, My Go-to Favorite
  • 1 Tablespoon About A Handful Toasted Pine Nuts
  • 1 whole Tomato, Sliced
  • 2 slices Lemon, For Garnish

Preparation

Heat BBQ to high.

Drizzle olive oil on both sides of the fresh halibut and rub it in. Season with good Italian herbs.

Place fish on hot grill. Let it cook on high until it lifts easily, about 4-5 minutes. Don’t try to turn it too soon or it will stick to the grill. Only turn once! Cook for a total of about 7-10 minutes depending on the thickness of the fish. Don’t overcook.

Arrange arugula on a platter and squeeze lemon and drizzle a little olive oil. Place fish on arugula and squeeze a little lemon on the fish.

Top with a dollop of pesto. Sprinkle with pine nuts and top with the tomato. Garnish with lemon slices.

Close your eyes, take a bite, pretend you’re in Rome, and enjoy!
