The combination of the crusty ciabatta, salty olive salad and the complex “tang” of fermented salami makes this one of the best sandwiches that I have ever made!
Slice ciabatta bread in half and spread olive salad on one side. Layer salami and pepperoni on top of the olive salad. Add lettuce and shredded cheese. Top with other half of bread.
Spray the top of the bread with olive oil. Place sandwich in preheated panini press (high heat) and apply pressure for at least 1 minute. Continue to cook until cheese has started to melt, about 2 more minutes.
Slice and serve!
