An incredibly simple technique for making perfectly cooked shrimp.
Preheat oven to 425ºF.
Pat shrimp dry and drizzle with olive oil. Spread shrimp in a single layer on a half sheet pan. Drizzle with more olive oil and toss to coat (rearrange shrimp in a single layer). Sprinkle evenly with kosher salt and pepper. Roast in the center of the oven for 8–10 minutes.
