Description

A fun Mexican dish!

Ingredients

  • 1 pound Ground Beef
  • ½ whole Onion, Chopped
  • 2 Tablespoons Taco Seasoning
  • ¼ cups Salsa
  • 3 whole Eggs
  • 1-¼ cup Milk
  • 1 cup Biscuit Mix (like Bisquick, Or See My Recipe Box For My Homemade Mix)
  • 1 cup Shredded Cheddar Cheese
  • 1 whole Tomatoes, Diced
  • For Serving: Chopped Lettuce, Diced Tomatoes, Sour Cream, Salsa, Ranch Dressing

Preparation

Preheat oven to 375 F. Grease a large pie plate (roughly 10 inches x 1.5 inch deep). Set aside.

In a skillet over medium heat, brown the ground beef and onion until no longer pink. Stir in taco seasoning and salsa. Spread the meat mixture into the pie plate.

In a medium sized bowl beat eggs, milk, and biscuit mix until smooth, about 1 minute. Pour into the pie plate and smooth the top. Bake it in the heated oven for 25 minutes, then remove it from the oven and top with cheese and tomatoes. Bake it for 10-15 minutes longer. If desired, you can broil it for the last minute to brown the tomatoes. Remove from oven.

Cut into wedges and serve with toppings of choice. I suggest lettuce, tomato, sour cream, salsa, and ranch dressing.

I made this last night and it was quite tasty. I accidentally used more salsa than specified, but I still thought the beef part was great. HOWEVER, for the Bisquick layer, next time I would definitely reduce the eggs down to 1-2 eggs. The top layer was like a souffle’ or a quiche, not biscuit-y like I’d hoped. I see other similar recipes online only call for 2 eggs, so that may be a mistake in this recipe.
