A quick and easy chicken dish for a weeknight meal or a lazy weekend. Only four ingredients. You can use low fat or fat free mayonnaise to make it an even healthier choice for your family. If you don’t tell the kids that hummus is made from chickpeas, they’ll never know they’re getting all that extra nutrition!
Preheat the oven to 350F. Slice each chicken breast in half.
Mix together the remaining ingredients. Spread some of the hummus mixture inside each chicken breast, fold the halves closed, then spread some on top of each chicken breast. Place on an ungreased cookie sheet and put it into the oven.
Bake until the chicken is cooked thoroughly, about 50-60 minutes.
