This recipe is actually one of our favorites and the kids are now fighting over who gets the last chicken thigh as we speak! (My kids love anything that makes their hands sticky and gooey).
In a medium sized bowl combine BBQ sauce, onion, soda, preserves, honey, jalapenos and jalapeno liquid. Stir to combine. Remove 1-1/2 cups of the mixture to a blender and blend until smooth. Set this pureed mixture aside.
Place chicken into the larger bowl of marinade ingredients, pour the marinade over the top and marinate in the refrigerator for at least one hour.
When ready to cook, preheat grill to medium heat-high heat. Lightly oil grill grate. Remove chicken from marinade and place on grill until cooked through, about 5 minutes per side.
In the meantime place 1 1/2 cups of pureed sauce in a heavy bottom grill pan. Cook over medium heat while the chicken is grilling. Cook until thick and reduced.
Serve 2 pieces of chicken on a plate with a drizzle of hot raspberry BBQ sauce and some Bush’s Smokehouse Traditional Grillin’ Beans. Bush’s baked beans offer the perfect accompaniment to an amazing, outdoor, sticky, fun, mess called dinner!
