Description

This simple, unexpected sauce takes your chicken to a whole new level. Even my kids ate this right up!

Ingredients

  • ½ cups Butter
  • ½ cups Honey
  • ⅓ cups Dijon Mustard
  • 3 teaspoons Curry Powder
  • ¼ teaspoons Cayenne Pepper (or More Depending On Your Taste)
  • 4 whole Boneless, Skinless Chicken Breasts

Preparation

Preheat oven to 375 degrees. Grease/spray a small baking dish (9×9 square or 9×13, depending on the size of your chicken breasts). Rinse chicken, pat dry, and arrange in your dish.

In a small saucepan, melt the butter. Add the remaining sauce ingredients and mix well to combine. Bring sauce to a boil, stirring constantly. Once boiling and noticeably thickened, remove sauce from heat and pour it all over the chicken.

Cover your dish with foil and put the pan into the oven; bake for 20 minutes. Remove foil; bake an additional 20 minutes. You may want to peek at your dish from time to time to make sure the sauce is still keeping your chicken nice and cozy.

This is fantastic with white rice or potatoes. Make sure to spoon some of the delicious sauce on your chicken and accompaniment!

This is very easy to make and delicious, but I don’t think it needs all that butter. I substituted about 1/8 of a cup of canola oil for the butter. I also added a little bit of lemon juice. We really like the kick that the cayenne pepper adds. I’ve also made it successfully with chicken on the bone.

I found this recipe about a year ago on a different cooking site. It’s a great base recipe, but I made a few changes to adjust it to my taste. 1. I at least doubled the curry powder as I did not feel that there was enough. 2. I put chopped onions, potatoes and shredded carrot in w/ the chicken and sauce. 3. I at least doubled the sauce mixture. After baking everything, I served over rice and garnished w/ cilantro. Great flavor and very easy to make!
